Many people throughout the blogosphere, twitter, and even on YouTube have been talking about the same thing this week. Your holiday meal this year may have as many as 4,500 calories! And you might have also heard that the average person gains 5-7 pounds over the holidays, each year! With this in mind, I want to challenge my readers to The 95210 Challenge! Read on for details. This week we had the second FREE session of our Meals That Heal series on cancer fighting foods. This time, we had a cooking demonstration of a Coconut Fish Stew with Basil and Cilantro. Not only was it amazing food, it was a good time to learn, visit, and ask questions of our Chef Nicole Sandleben, our Registered Dietitian Marci Reed, and our ODS Health Coaches. There are still two FREE sessions left in the series so be sure to sign up!
During the cooking class, Chef Nicole shared each recipe while Registered Dietitian Marci explained the health benefits of each ingredient. Check out the video below where Marci explains the cancer fighting properties of cauliflower.
After learning to make the recipe, we joined together as a group and enjoyed this tasty meal. What a great night it was!
In this session, we made the following recipes:
- Coconut Fish Stew with Basil and Cilantro (Click on the link for this recipe!)
- Bitter Green Salad with Apples, Grapes, Toasted Walnuts, Olives and Walnut Oil Vinaigrette
- Curry Roasted Cauliflower
- Simple Brown Rice
Joins us for the FREE cooking class and food tastings to come! To register for each event, please call 503-335-3500.

Our health coaches here at ODS use a portion control guide to teach the importance of healthy meal choices. With the holiday’s just around the corner, it’s a great time to go over the basics to help avoid winter weight gain. I know I am looking forward to the cooking and baking this year. Just make sure to have all your food indulgences in moderation.
The below information is a suggestion guide for one meal only to promote a healthy diet*. I have also included a portion control picture outline to help visualize serving sizes. Feel free to print this out and place on your refrigerator as a reminder. (more…)
ODS has partnered with the Text4baby, a free mobile information service that provides pregnant women and new moms with information to give their babies the best possible start in life. The FREE service was created by the National Healthy Mothers, Healthy Babies Coalition and launched in 2010. Women who sign up for the service by texting BABY to 511411 (or BEBE in Spanish) will receive free SMS text messages each week, timed to their due date or baby’s date of birth. To date, more than 50,000 women have registered to receive text messages. (more…)
